One-pen Salmon Veggies (Air Fryer)

This Air Fryer One-Pan Garlic Herb Salmon & Veggies is a quick, healthy, and flavorful dinner that comes together in less than 30 minutes. Tender salmon fillets are seasoned with aromatic garlic and herbs, paired with crispy, roasted vegetables for a complete meal in one pan. Perfect for busy weeknights or as a light and satisfying meal.

Ingredients:

  • Salmon:
    • 2 salmon fillets (6 oz each), skin-on or skinless as preferred
  • Seasoning:
    • 1 tablespoon olive oil
    • 1 teaspoon garlic powder or 2 cloves garlic, minced
    • 1 teaspoon dried Italian herbs (or fresh herbs like parsley, dill, or thyme)
    • Salt and black pepper to taste
  • Vegetables:
    • 1 cup broccoli florets
    • 1 cup chopped zucchini
    • 1 red bell pepper, diced
    • 1 small red onion, sliced
    • 1 tablespoon olive oil
    • Salt, black pepper, and a pinch of chili flakes (optional)

Instructions:

1. Prep the Ingredients:

  • Rinse and pat dry the salmon fillets. Coat them lightly with olive oil and season with garlic, herbs, salt, and pepper.
  • In a large bowl, toss the vegetables with olive oil, salt, pepper, and optional chili flakes.

2. Preheat the Air Fryer:

  • Preheat the air fryer to 375°F (190°C) for 3-5 minutes.

3. Cook the Vegetables:

  • Add the seasoned vegetables to the air fryer basket in a single layer. Cook for 5-7 minutes, shaking the basket halfway to ensure even cooking.

4. Add the Salmon:

  • Move the vegetables to the sides of the air fryer basket and place the salmon fillets in the center, skin-side down (if using skin-on).
  • Continue cooking at 375°F (190°C) for 10 minutes, or until the salmon reaches an internal temperature of 145°F (63°C).

5. Finish and Serve:

  • Carefully remove the salmon and vegetables from the air fryer. Garnish with fresh herbs or lemon wedges, and serve immediately.
