Creamy White Chocolate Mousse

Ingredients

  • 2 large eggs, separated

  • 300ml (1 1/4 cups) heavy cream

Instructions

  1. Melt the White Chocolate:
    • Place the white chocolate in a heatproof bowl over a pot of simmering water (double boiler method). Stir until fully melted and smooth. Set aside to cool slightly.
  2. Prepare the Egg Mixture:
    • In a medium bowl, whisk the egg yolks with the vanilla extract. Gradually mix the melted white chocolate into the egg yolks until smooth.
  3. Beat the Egg Whites:
    • In a separate clean bowl, whisk the egg whites until soft peaks form. Gradually add sugar while whisking, continuing until stiff peaks form.
  4. Whip the Cream:
    • In another bowl, whip the heavy cream until soft peaks form.
  5. Combine Ingredients:
    • Gently fold the whipped cream into the white chocolate mixture, followed by the beaten egg whites. Use a spatula and fold gently to maintain the airy texture.
  6. Chill the Mousse:
    • Spoon the mousse into serving glasses or bowls. Cover and refrigerate for at least 4 hours, or until set.
  7. Garnish and Serve:
    • Top with fresh berries, grated white or dark chocolate, or a drizzle of berry coulis before serving.
